The winery is gifted with the best oenological equipment and is completely temperature controlled.  It is located on the ground floor in order to facilitate wine-making and storage operations. 

By choice, we never use reverse osmosis concentration technologies since we feel the quality starts from the management of the vineyards and ends with the bottle, as per the most classic, oenologic traditions in Piedmont.

 

In the areas dedicated for wine refinement, there are small and medium-caliber barrels.  The red wines age in Barriques (225 liters), Tonneau (500 liters), and 10-HL casks; all rigorously of French “Allier” oak.

Slovanian 25-HL oak barrels are used for aging traditional Barbaresco whereas the “Serragrilli” cru Barbaresco lies in Barrique and Tonnieau barrels.

 

The original “barricaia”, or wine cellar, is underground, carved out of the space where the Lequio family once made wine at the turn of the 20th century.  The temperature and humidity here is optimal for maintaining both the wine and the Barriques wood, thereby preventing the staves from opening, causing the wine to leak out.

Each Barrique has a life expectancy of four years afterwhich it is replaced with new ones.

The cost of refining our wines this way is very high, but the results are truly exceptional.
